Creamy Cauliflower Soup

It’s been so freezing in NYC and Upstate New York!!  You almost have to stay inside, and I have been craving warm foods.  I switched up my usual go to soup for this and it was a hit!  Creamy, satisfying, and warm, this soup is both dairy and gluten free with lacking any flavor.   Let me know if you try it!

 Creamy Cauliflower Soup

  • 2 heads of cauliflower cut into florets
  • 3 tbsp Olive oil
  • 2 shallots
  • 4 ribs of celery, sliced
  • 1/2 can of full fat coconut milk
  • 32oz vegetable stock
  • 4 tbsp nutritional yeast
  • 1 tsp garam masala  
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt and pepper to taste

Heat the oil in a heavy bottomed pot (I use a cast iron Dutch oven for the added iron supplement.) Add the shallot and celery and cook until translucent.  Add the cauliflower and cook another minute.  Add the coconut milk and vegetable broth making sure the liquid almost covers the veggies.  Last, add seasonings.  Cook on low heat until Cauliflower is tender.  Use an immersion blender or food processor to blend until smooth and creamy!  Top with ancho chili powder for extra heat.  Enjoy!!
